Simplify Your Production: 3-Ingredients Crystal Mochi

Making these beauties is a breeze with our Crystal Mochi Premix. It takes just 3 ingredients (plus your choice of fillings) to produce soft, chewy, and is freeze-thaw stable, making it perfect for busy kitchens. 

Ingredients

  1. Crystal Mochi Premix
  2. Maltose Syrup BE 43
  3. Water

Best filling to dough ratio

  1. Filling (of your choice) : 15g
  2. Dough 25g 

Here's the scoop on how to make it:

  1. Weigh the maltose syrup and water, then bring the mixture to medium heat until all ingredients are well-dissolved.
  2. Pour the melted mixture into Crystal Mochi Premix and mix well until no lumps remain.
  3. Strain the batter before pouring it into a container to ensure no lumps.
  4. Steam the batter for 25 minutes at low heat until the dough has set, and the inner temperature reaches 80-90°C.
  5. Let the dough cool down until the colours of the dough turn from opaque white to transparent, or you may keep the dough overnight.
  6. For each piece of mochi, wrap 15g of your chosen filling with 25g of dough.
  7. Coat the mochi with shortening to prevent sticking your hands and moulds.
  8. Keep in the freezer.
