Overview

Malaysia's reception to all things confectionery and Japanese has grown over the last years as we are seeing more and more Japanese-inspired desserts bloom in the bakery and pastry market.  

Among them is the “daifuku mochi”, a dessert similar to authentic mochi but consists of a sweet filling! However, in order to meet increasing demands and ensure a more long-lasting product, food producers often develop daifuku mochis designed for storage in frozen to chilled conditions. Due to these factors, daifuku mochis in the market tend to experience ice crystals formation and starch degradation when thawed, making them less chewy and visually unappealing at the end of the consumer chain. Our objective at Markaids is to create a daifuku mochi dough that can withstand these issues while upholding taste and texture upon storage in frozen or chilled conditions. 

Solution

Our Innovation Technologists presented the latest addition to our customers for their frozen daifuku mochi production: the Markaids MochiQ™. This pregel premix contains ingredients and a specially crafted recipe that preserves the desired chewy consistency of the frozen daifuku mochi dough. With this pregel H02C, our customer was able to streamline their production process and reduce processing time as they are able to skip the steaming step. In addition, we supplied our customer with a recipe and expert guidance on utilising this premix to create delectable frozen daifuku mochis.

Impact

Our Markaids MochiQ™ Premix produced excellent daifuku mochis that maintained their texture, appearance, and chewiness after frozen for up to a week or chilled for four days, as required by our customer. Remarkably, our internal testing at the Innovation Centre demonstrated that the mochis can last up to 12 months when kept in frozen conditions!
