Ingredients

  1. MochiQ™ H02C
  2. Maltose syrup BE43 
  3. Water
  4. Shortening

  1. Filling (of your choice) : 15g
  2. Dough 15g

Here's the scoop on how to make it the most basic mochi:

  1. Weigh the maltose syrup, shortening, and water, then bring the mixture to a boil until all the ingredients are well-dissolved.
  2. Pour the boiling mixture into MochiQ™ H02C and mix at low speed for 30 seconds, followed by medium-high speed for 3- 3 ½ minutes until the dough turns completely opaque and white. 
  3. For each piece of mochi, wrap 15g of fillings (of your choice) with 15g of dough.
  4. Coat the mochi with corn starch/cooked glutinous rice flour (koh fun).
  5. Keep in the freezer.
