Snowskin mooncake needs no introduction. The quintessential modern delicacy of the autumn festival, inspired by mochi desserts have taken the mooncake world by storm!
In time for the cultural and religious celebration, restaurants, bakers, and hotels go beyond to present their snowskin mooncake line-up filled with innovative flavours. To assess the pastries people have gone gaga for, the Markaids team visited the market. We came across a snowskin mooncake from a neighborhood go-to bakery that hardens, dries, forms ice crystals and the filling separates when left in the fridge for a long time. The goal was to improve the freshness characteristic while also extending the overall shelf-life of the soft-skin mooncake.
Solution
When we presented the findings and potential opportunity that the new snowskin mooncake would bring, the customer was open to trying our product, Markaids SnowskinPlus™. It was designed to easily make chewy, smooth and elastic textured snowskin mooncake that are stable for a long time in chilled or frozen condition without forming ice crystals.
