Markaids’ BetterCoat™ for Game-Changing Fried Chicken
How our trademark batter coating system produced fried chicken with prolonged crispiness for a well-known integrated poultry business
Overview
Whether it's crispy, juicy, pan or deep-fried, there's no denying that fried chicken holds a special place in the hearts (and stomachs) of foodies around the world.
In almost every town or city, fried chicken is certain to be available as a food item. The secret behind every piece of irresistible fried chicken lies simply in its coating. A crispy, flavourful, and well-seasoned crust is essential for making the perfect fried chicken. With so many other fried chicken vendors in the market today, businesses must ensure that their fried chicken coating stands out in taste and coating texture in order to remain competitive.
Fried chicken coating that falls off, softens, or distributes unevenly can lead to customer disappointment and ultimately impact sales. Being a solution provider to food challenges, Markaids was approached to help create good quality fried chicken by a local poultry distributor. We were tasked with the objective of designing a batter coating system using our specialty ingredients for high standard fried chicken production.
Solution
Leveraging the speciality food ingredients know-how of our Innovation Technologists, we proposed our BetterCoat™ Battermix and Breader coating systems. After various coating trials, frying tests, and continuous follow-ups, we successfully produced fried chicken that retained a coat with exceptional adhesion, crunchiness, visual appeal and prolonged crispiness for our client.

Impact
Markaids BetterCoat™ Battermix and Breader coating systems were able to produce fried chicken that held its crust throughout the deep-frying process. The coating proved to exhibit both delicious taste and good adherence to the chicken. Using these systems, our client was ensured quality fried chicken products for their business.
Markaids BetterCoat™ coating system is also able to cater to the production of tempura nuggets, be it meat or plant-based, seafood tempura, katsu or karaage (Japanese fried chicken).
